Cheese Potatoes
2 lbs -- Hash Brown Potatoes
2 cups -- Shredded Cheddar Cheese
1 pt -- Sour Cream
1 can -- Cream of Chicken Soup
Chopped Onion (to your taste)
Salt and Pepper (to your taste)
Mix all ingredients together in a 9x13 baking dish. Bake 300 degrees for 1 1/2 hours.
Best, if made night before. Bake the day you want to serve them.
Chicken Croquettes
3 cups -- Cooked Rice
3 cups -- Cooked Chicken
1/2 cup -- Chopped Celery
1/2 cup -- Chopped Onion
3 -- eggs (beaten)
3/4 tsp -- Poultry Seasoning
1 cup -- Shredded Cheddar Cheese
1 tsp -- Salt
1/2 cup -- Melted Butter
1 cup -- Cornflake Crumbs
Grind or chop chicken. Mix first 8 ingredients and chill. Form into patties
or balls. Roll into the method butter and then into crumbs. Bake at 350 degrees for
30 minutes, or until golden brown. Makes approx 14.
